Hi,
If I understand correctly, you want to obtain the images at a higher resolution in your plots in your Jupyter Notebook? If so, you would have to either increase the size of the plot or request imagery at a higher resolution.
I think a good place for you to start would the Sentinel Hub python library documentation. Working through the tutorials here will help you understand in more detail how to obtain Sentinel-2 at its highest resolution.
