You should use Statistical API’s POST option along the following steps:
-convert your JSON’s geometry to WKT
-you will need to change the order of the coordinates as Statistical API requires latitude/longitude order

None of the above should be too complicated, see example below (I replaced the instance ID with MASKED)
This option should work also with many rings. Do note however that you will get one summarized result. So if you want statistics for each ring separately, you will need to call the API for each ring separately.
