Hi there! I’m doing a research project looking at the melt rates of semi-perennial snow patches in the Snowy Mountains of SE Australia. I’m on the trial package and can only get data back to 2016. Is there a paid option that gets me data back further. I’d really like to get back to '70s if possible.

Sentinel data only go back to 2015.
Try using Landsat data, though. These go back to 80-ties, even 70-ties in some parts, see:
Use Sentinel Hub Processing API to access Landsat 1-5 Multispectral Scanner System Level 1 data with 4 optical bands.
You can access Landsat data with a free trial account as well.
