To answer you questions:

1. The Sentinel-2 data we provide is sourced from ESA, Sentinel Hub provides easy to use API services to access the data. For more information on the processing levels of the data you can check out the Sentinel-2 documentation page here. I would also encourage you to read through the FAQs on our website here too.
2. You are correct that there are some incomplete datasets through Sentinel Hub data collections, for example MODIS. However, due to the costs and highly specialised applications for each of these datasets, it is not feasible to host and provide all of these datasets. If there is a specific dataset you require, you can always using our Bring Your Own COG API.
3. Are you able to provide some examples of what you mean by this?
4. If you are looking for data descriptions, I would advise you to check through the Sentinel Hub Public Collections website here, and for our Core collections to look at the Documentation website, where there are plenty of API data request examples for you to use.
